The salt extraction technique, adopted in the Trapanese salt pans, is based on the spontaneous evaporation of seawater. Since ancient times, salt production cycles have naturally been linked to the succession of seasons, beginning between March and April and ending in October. The winter semester remains the natural resting period for the ponds, preparing for the production of the following season. Salt is produced through a selective process of "fractional precipitation." Only when the brine reaches a saturated solution state is it introduced into the crystallization ponds, where sodium chloride precipitates, creating layers that can reach 12-15 centimeters thick. Harvesting is carried out both manually and mechanically. The latter method allows for efficient harvesting while preserving all the characteristics of sea salt.

Our sea salt is harvested from the stretch of coast that begins at the Trapani-Paceco Salt Pans Nature Reserve and extends to the Stagnone Lagoon in Marsala. This stretch of coastline is one of the most pristine in Western Sicily.
